Medley Casserole

I was thinking today how sometimes, those meals that we have all the time may be something special to someone who hasn't tried it before. So today I am sharing with you one of our regular dinner rotations! This is the ultimate comfort food for me. I don't know if it's the warm casserole or the taste of this dish that reminds me of my childhood. Either way... this is one of our favorite meals in our house.

The story behind the casserole: My mother-in-law actually made this casserole once when my husband and I had just started dating and I devoured it because it tasted like a common Friday meal from my childhood. When I say "Friday meal" I realize that requires some extra explanation. I as fortunate enough to have one of the most amazing babysitters when I was growing up. She was so nurturing to both me and my little brother but she also instilled many values in us that have evolved me in to the person I am today. Not only did our babysitter, Mary, teach us how to play, create, use our imagination and the world around us, she also taught us not to waste. She made us lunch everyday that always included a vegetable and anything we didn't finish, she saved. At the end of the week she would mix all of the leftovers together in a pan with some mac'n'cheese or spaghettios and voila! We had medley. I know it sounds kinda gross, but it was actually delicious! This casserole is the best of that, therefore it was dubbed medley casserole!



Ingredients:
1 lb ground beef
1 box of shell noodles
1 can of tomato soup (for a bit more saucy casserole, use 1 1/2 cans!)
1 can of creamed corn
1 bag of shredded cheese


Directions:
Brown the hamburger and drain. Cook the noodles to almost cooked through (al dente) and drain. In a 9x13 pan, mix all of the ingredients together and stir well to make sure everything is coated. Cover the pan and bake at 350 degree for 30-35 minutes! Enjoy!
